Adobo Shrimp Tacos

Serves 4-6

Ingredients

  • 1 pound of peeled shrimp 
  • 1 tablespoon of Cooking with my Doctor Adobo 
  • 2 tablespoons of olive oil 
  • 1 teaspoon of finely chopped lemon zest 
  • 1 avocado, diced 
  • 1/4 cup of Cooking with my Doctor Salsa Criolla 
  • Juice of 1 lemon 
  • 1 tablespoon of Cooking with my Doctor Pónselo a To' 
  • 1 finely chopped jalapeño 
  • 2 tablespoons of finely chopped chives 
  • 6 corn tortillas Preparation

Preparation

  1. Mix all the marinade ingredients and add to the shrimp. 
  2. Marinate for two hours. Grill for 6-8 minutes on both sides. 
  3. Remove from heat and let rest for 10 minutes. 
  4. For the sauce, blend all the ingredients except the oil. 
  5. Gradually incorporate the olive oil. 
  6. Serve the shrimp with the avocado and cilantro sauce, and finish with fresh cheese, cilantro leaves, and thin slices of red onion.
