Tropical Churrasco Skewers
Serves 4-6

Ingredients
For the Skewers
- 1 pound of churrasco, cut into thin slices
- 3 peppers, cut into medium pieces
- 2 onions, cut into medium pieces (optional)
- 2 tablespoons of Cooking with my Doctor Asado Rub
- 1 tablespoon of olive oil
- Juice of 1 lemon
- 6 wooden skewers
For the Tropical Sauce
- 1 cup of finely chopped cilantro leaves
- 1/2 cup of finely chopped pineapple
- 1/2 cup of finely chopped mango
- 1/2 red onion, thinly sliced
- 1 tablespoon of Cooking with my Doctor Sofrito
- 1/4 cup of olive oil
- 2 tablespoons of lime juice
- 1 tablespoon of apple cider vinegar
- 1/2 teaspoon of red pepper
Preparation
- Mix the Asado rub with the olive oil and lemon juice.
- Add to the churrasco slices and mix well.
- Let marinate for 15 minutes, then thread the churrasco slices and red peppers onto the skewers.
- Grill the skewers on the BBQ or in a pan.
- For the tropical sauce, whisk the lime juice with the oil, then add the rest of the ingredients and mix well.
