Pasta Salad with Roasted Corn and Arugula

Fresh and easy pasta salad packed with corn and arugula, fresh feta cheese, roasted almonds and a delicious honey/lemon vinaigrette! This recipe is a complete meal made with wholesome carbs, healthy fats and protein.

1 cup dry pasta of your choice

1/2 cup of roasted corn

1/2 cup of arugula

1/4 cup of feta cheese

5 basil leaves, finely chopped

1/4 cup of roasted almonds

1 teaspoon of honey

2 tablespoons of olive oil

2 tablespoons of lemon juice Salt and pepper to taste   


  1. Cook pasta in boiling water for about 7 minutes.
  2. Drain the water, return pasta to the pot and add a little olive oil. Let it cool.
  3. In a separate bowl mix honey, lemon juice and olive oil.
  4. Incorporate all the ingredients with the pasta and mix well.
