Chicken Breast Stuffed with Sweet Plantains, Spinach, and Mozzarella Cheese

Ingredients
- 4 chicken breasts
- 2 ripe plantains cut into small pieces
- 1 tablespoon of Asado Cooking with my Doctor
- 1 teaspoon of Garlic Paste Cooking with my Doctor
- 5 fresh basil leaves finely chopped
- 2 tablespoons of olive oil
- 1 cup of mozzarella cheese
- 2 cups of cooked and drained spinach
Preparation
- Cut the chicken breasts in half.
- Mix the Asado with the garlic paste and rub it all over the chicken breasts.
- Sauté the plantains in olive oil until golden brown.
- Mix the plantains with the cheese, spinach, and basil.
- Stuff the chicken breasts and bake at 375°F for 30 minutes until the chicken is golden brown.
