Pasta Salad with Roasted Corn and Arugula
Ingredients
1 cup dry pasta of your choice
1/2 cup of roasted corn
1/2 cup of arugula
1/4 cup of feta cheese
5 basil leaves, finely chopped
1/4 cup of roasted almonds
1 teaspoon of honey
2 tablespoons of olive oil
2 tablespoons of lemon juice
Salt and pepper to taste
Process
1) Cook pasta in boiling water for about 7 minutes.
2) Drain the water, return pasta to the pot and add a little olive oil. Let it cool.
3) In a separate bowl mix honey, lemon juice and olive oil.
4) Incorporate all the ingredients with the pasta and mix well.
