Coquito Bread Pudding
Ingredients:
- 2 cups Coquito
- 1/2 pound bread (sobado, brioche, baguette)
- 4 beaten eggs
- 1 tablespoon vanilla paste Cooking with my Doctor
- 1 teaspoon cinnamon
- A pinch of salt
- 1/4 cup almonds
- 1 tablespoon shredded coconut
Instructions
- Mix Coquito with cinnamon, salt, eggs, and vanilla paste. Dip the bread in the Coquito mixture and allow the bread to soak.
- Add almonds and shredded coconut.
- Grease the edges of a baking dish with coconut oil.
- Spread bread in the dish and bake for 20 minutes at 375 degrees.
