Coquito Bread Pudding

Ingredients:

  • 2 cups Coquito
  • 1/2 pound bread (sobado, brioche, baguette)
  • 4 beaten eggs
  • 1 tablespoon vanilla paste Cooking with my Doctor
  • 1 teaspoon cinnamon
  • A pinch of salt
  • 1/4 cup almonds
  • 1 tablespoon shredded coconut

Instructions

  1. Mix Coquito with cinnamon, salt, eggs, and vanilla paste. Dip the bread in the Coquito mixture and allow the bread to soak.
  2. Add almonds and shredded coconut.
  3. Grease the edges of a baking dish with coconut oil.
  4. Spread bread in the dish and bake for 20 minutes at 375 degrees.
