Green Papaya Coleslaw with Carrots

Ingredients

  • 1 cup of finely sliced purple cabbage
  • 2 cups of green papaya, cut into small slices
  • 1 tablespoon of Pónselo a To’ Cooking with my Doctor
  • 1 cup of thin carrot strips
  • 1/4 cup of pineapple juice
  • 3 tablespoons of mayonnaise
  • 1 tablespoon of apple cider vinegar
  • 2 teaspoons of Adobo Cooking with my Doctor
  • 2 tablespoons of finely chopped cilantro

Preparation

  1. For the coleslaw, mix the pineapple juice, mayonnaise, vinegar, Pónselo a To’, and Adobo.
  2. Add the papaya, cabbage, and carrot to the mixture.
  3. Mix well and let sit for 20 minutes.
