Green Papaya Coleslaw with Carrots

Ingredients
- 1 cup of finely sliced purple cabbage
- 2 cups of green papaya, cut into small slices
- 1 tablespoon of Pónselo a To’ Cooking with my Doctor
- 1 cup of thin carrot strips
- 1/4 cup of pineapple juice
- 3 tablespoons of mayonnaise
- 1 tablespoon of apple cider vinegar
- 2 teaspoons of Adobo Cooking with my Doctor
- 2 tablespoons of finely chopped cilantro
Preparation
- For the coleslaw, mix the pineapple juice, mayonnaise, vinegar, Pónselo a To’, and Adobo.
- Add the papaya, cabbage, and carrot to the mixture.
- Mix well and let sit for 20 minutes.
