Salmon Fillet with Avocado and Cilantro Sauce

Serves 4-6

Ingredients

  • 2 pounds of salmon fillet
  • 1/2 cup of orange juice
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoon of Asado Cooking with my Doctor
  • 1 tablespoon of Garlic Paste Cooking with my Doctor
  • 2 tablespoons of olive oil

For the Sauce:

  • 1 ripe avocado
  • 3 tablespoons of sour cream
  • 1/2 bunch of fresh cilantro
  • 2 teaspoons of Sazón Cooking with my Doctor
  • Juice of 2 limes
  • 2 tablespoons of olive oil
  • Fresh cheese, cilantro leaves, and thinly sliced red onion to garnish

Preparation

  1. Mix all the marinade ingredients and add to the salmon.
  2. Marinate for two hours.
  3. Grill over charcoal for 6-8 minutes on each side.
  4. Remove from heat and let rest for 10 minutes.
  5. For the sauce, blend all ingredients except the oil. Gradually incorporate the olive oil.
  6. Serve the salmon with the avocado and cilantro sauce, garnished with fresh cheese, cilantro leaves, and red onion slices.
