Chicken Breast Stuffed with Sweet Plantains, Spinach, and Mozzarella Cheese

  • 4 chicken breasts
  • 2 ripe plantains cut into small pieces
  • 1 tablespoon of Asado Cooking with my Doctor
  • 1 teaspoon of Garlic Paste Cooking with my Doctor
  • 5 fresh basil leaves finely chopped
  • 2 tablespoons of olive oil
  • 1 cup of mozzarella cheese
  • 2 cups of cooked and drained spinach


  1. Cut the chicken breasts in half.
  2. Mix the Asado with the garlic paste and rub it all over the chicken breasts.
  3. Sauté the plantains in olive oil until golden brown.
  4. Mix the plantains with the cheese, spinach, and basil.
  5. Stuff the chicken breasts and bake at 375°F for 30 minutes until the chicken is golden brown.
